Grilled Lemon-Honey Chicken Breasts


You can never learn enough ways to cook chicken. Boneless/skinless chicken breasts are probably the healthiest meat around, but if you don't have enough different recipes in your arsenal, they can get boring in a hurry.

That's why this recipe that I found on www.epicurious.com jumped out at me. I love the taste of lemon. It gives everything it touches such a nice, fresh and clean flavor. This dish was easy to prepare and was quite tasty. I'd just recommend marinating it for a bit longer than the minimum one hour the recipe suggests. In fact, as with any marinade, the longer the better.


Grilled Lemon-Honey Chicken Breasts

Ingredients
  • 4 boneless/skinless chicken breast halves
  • 1 small onion, finely chopped
  • 6 tbsp fresh lemon juice
  • 2 tbsp vegetable oil
  • 2 tbsp honey
  • 1 tbsp reduced-sodium soy sauce

Directions

1) Place chicken in a shallow dish. Mix lemon juice, vegetable oil, honey and soy sauce in a small bowl. Pour 1/2 cup of onion mixture into dish; turn to coat.

2) Let stand one hour at room temperature or refrigerate up to four hours.

3) Pour remaining onion mixture into small sauce pan. Boil until slightly reduced and thickened, about 2 minutes. Reserve for glaze.

4) Pre-heat grill to medium-high heat.

5) Remove chicken from marinade, shaking off excess. Sprinkle with salt and pepper.

6) Place chicken over direct heat. After 2 minutes, rotate chicken 30 degrees (this will give you great grill marks). Flip after 7 minutes. After another 2 minutes, rotate chicken another 30 degrees.

7) Grill until approximately 155 degrees, roughly another 7 minutes.

8) Tent under aluminum foil for 5 minutes to allow juices to properly redestribute.
